Tomato Basil Soup

Eric insisted that I attempt to write down the recipe for this soup, which I made by tossing stuff together … he’d like to have it again!

Tomato Basil Soup

½ onion (about ½ c finely chopped)
3 cloves garlic (about 1 ½ T minced)
1 ½ T butter
1 T flour
½ t salt
¼ t pepper
1 c milk
1 small can tomato sauce
1 c bone broth (I used half turkey, half beef that I had leftover in the fridge)
½ t sugar or honey
1 t sweet basil
½ t parsley
½ c heavy cream
1 T worcestershire sauce

All measurements are approximate!

Saute onions in butter until translucent, add garlic. When fragrant, after about a minute, add flour, salt and pepper. Cook while stirring for one minute. Add milk, broth, tomato sauce, basil and parsley. Stir constantly until it comes to a full boil (continues to boil well even while stirring). Add cream & worcester sauce, bring back to a boil and let simmer until you’re ready to eat.
